makes about 50 sugar cookies.(perfect for parties)very time consuming though
cookies
5 cup of flour
4 tablespoon soy milk
1 1/2 teaspoon baking powder
1 1/2 teaspoon salt
1cup +2 tablespoon olive oil(not virgin- too flavorful, or vegetable oil or 1 and a half cup margarine or butter)
2 1/4 cup white sugar
4 eggs
1 tablespoon vanilla
chill for an hour. wrap for sections of dough in cling wrap.
take out one section at a time.
kneed dough with a little bit of flour just so the dough isn’t shiny or rock hard anymore.
roll flat about an 1/8- 1/4 inch thick
cut into desired shapes and place on a silpat mat, or parchment paper, or ungreased baking pan.
baking at 450F for 8-12 minutes
icing
1/2 cup earth balance margarine
3 cups icing sugar
2 tablespoon soymilk or water
2 teaspoon vanilla flavouring
mix until desired thickness, add more soymilk for a smoother consistency.
take out about 1 1/2 cups of the icing, and add black food colouring, I used wilton food colouring paste.
spread the black all over the cookies, let harden then using a piping back make mummies with cut up raisin eyes and skeletons.(of course you can make anything you want, but these spooky treasures are perfect for Halloween)
I also made some spooky gingerbread cookies that look exact same but use less icing(just used white lines) using this recipe and the same icing recipe as the sugar cookies
