gingerbread cupcakes

I don’t know how I missed putting this one up around Christmas time but I just found the pictures, so here it is.

1/2 cup sugar
1/2 cup earth balance margarine (melted to very soft)
1 egg
1 cup molasses
1 teaspoon salt
2 1/2 cups flour
1 1/2 teaspoon baking soda
2 teaspoon teaspoon cinnamon
1 1/2 teaspoon ground ginger
1/2 teaspoon ground cloves

Oatmeal banana and apricot waffles

Good for days when you have an upset stomach!

2 cups oats
2 cups flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 eggs
1 1/2 cups soy milk or almond milk
3 tablespoon brown sugar
4 tablespoons vegetable oil
2 medium sized banana sliced
1/4 cup chopped dried apricot

Pour 1/3 cup of batter on medium heated and well oiled waffle machine.

chocolate peanut coconut caramel bars

I traveled to New West from downtown Vancouver in hopes of finding chocolate bars at this vegan store out there, just to be sadly disappointed in finding they were sold out!

So I tried my luck at making my own chocolate.
After 2 unsuccessful attempts with cocoa beans, I opted for the melting some chocolate chips to make bars.

-melt one and a half bags of vegan chocolate chips in a double boiler.(I have found these chocolate chips at Wholefoods, and a different brand at Choices before.)

-while that is melting line a 9/9inch pan with foil or parchment paper.

-Spread 3/4 of the melted chocolate on the bottom of the pan, sprinkle peanuts on top and put the pan into the freezer

next is making the caramel

1 1/4 cup coconut cream
1 cup brown rice syrup
1/4 cup water
1 cup sugar
1/4 cup vegan earth balance margarine

combine the coconut cream, rice syrup, water, and sugar  in a pan

with a candy thermometer  whisking periodically, heat up the mixture at medium heat until the thermometer reads 250

(it does bubble up pretty high at times lowering the temperature helps that problem)

remove from heat, and add the margarine and whisk until melted

pour caramel over the cold chocolate in the pan from the freezer, and return back to the freezer

wait until the caramel has cooled before getting the double boiler going again, but once it is cool set it up, and melt that 1/4 pan of chocolate again

when the pan from the freezer is cold, chop it into bar sized pieces and lay out on parchment paper,  spreading the chocolate  all over the caramel and return back to the freezer until firm. once firm  wrap in clingfilm or parchment paper, store in air tight container.

panettone bread pudding

1.5lbs of panettone
3 large eggs
1/4 cup coconut cream
3/4 cup soy milk(almond milk, ‘So Delicious’ coconut milk, rice milk, whatever!)

panettone

makes two loaves
This is a quicker recipe than most. found in a Betty Crocker cookbook but changed a bit to my liking. A solidly good fruit bread not exactly “panettone” but the recipe said it was..

4 1/2 teaspoon yeast
1 cup warm water
1/2 cup sugar
1/2 cup margarine(earth balance vegan margarine)
3 eggs
1 teaspoon salt
2 teaspoon lemon zest
1 teaspoon vanilla
5 cups all purpose flour (5- 5 1/2 cups)
1/2 cup golden raisins
1/2 cup mixed chopped dried fruit(cranberries, blueberries, apricot)

soak the fruit in 1/4 cup spiced rum

sprinkle the yeast over the warm water and sugar mixture, once bubbled, add the margarine, eggs, salt, zest, and vanilla. mix mix.

add everything else and using the dough hook mix well until a nice sticky ball is formed.

oil bowl, and oil ball of dough, cover and let raise for 1 1/2 to 2 hours

cut into two portions, and place into two pans lined with brown paper oiled on the inside where the dough will touch.

raise for another hour, or until the dough reaches the top of the paper.

bake at 350F for 35-45 minutes
brush with earth balance margarine hot out of the oven
