pizza dough, that works as hamburger bun dough

this dough is the best, it’s soft but doesn’t fall apart!

it is for a recipe book that was my grandmothers BEST OF BAKING

1/2 teaspoon sugar
2/3 cup warm milk(I used soy  milk)
1 package yeast(2 1/4 teaspoon yeast)
1 1/2 cup all purpose flour
1/4 teaspoon salt
3 tablespoons  olive oil

mix sugar and milk together sprinkle yeast on top.
add oil and  slowly add the flour and salt.

let raise and double in size.

for pizza- roll out flat and round for your corn meal’ed, or oiled pizza pan, and let raise up again, add sauce and cheese and toppings,  next just put it in the oven at 350F for around 40 minutes
makes two pizza thin crust, or one puffy crust
(I used this for a pizza roll up type of thing and actually doubled the recipe.)

for buns- cut into 6 buns( or however many for the size you want), and flatten to about half inch thick, let raise up again put an egg wash on and sprinkle some sesame seeds.
bake 350F for about 20 minutes

perfect soft buns

1 cup soy milk
1/2 cup water
1 tablespoon honey
1/4 cup margarine
1 egg
4 1/4 cups flour
2 1/4 teaspoon yeast
1 1/2 teaspoon salt

raise 45 minutes

cut into portions of desired size and lay out on pan.
do an egg wash if desired(I didn’t)
cover and raise for 20 minutes

preheat oven to 400F
bake for 10-15 minutes depending on size

these are super soft and don’t dry out a few days later like other buns I’ve made in the past. great for hot dogs, hamburgers, sandwiches, and I guess anything!

vegan pumpkin cinnamon buns

I really like pumpkin and am trying to put it in everything seems to be working so far.
buns
1 cup pumpkin puree
1/2 cup apple sauce
2 1/4 teaspoon instant yeast
1/2 cup white sugar
1/4 cup vegetable oil
4 cups flour

heat up the pumpkin puree in the microwave or on the stove top.
just to a warm temperature, even just leaving it to be room temperature should be okay.
add the yeast,applesauce and oil, then sugar and flour.
knead into a tight ball, put in a slightly oiled bowl and let double in size.
once doubled, punch it down and roll out into a rectangle.
let it fluff up a bit roughly 10 minutes.

while waiting for it to puff up you can make the spread.

middle spread
1 cup brown sugar
2 1/2 tablespoon cinnamon
1 teaspoon nutmeg
1/3 cup lactose free marg
1/4 cup chopped pecans

melt it all together and mix it up.

spread it all over the rectangle. roll up the rectangle and chop into 8 pieces

place in a pan that has parchment paper, or a mat on the bottom, and oiled sides.

let them poof up for about an hour(I only did half an hour, cause I have a cold and I want to go to bed. haha)

bake at 400F for 12-15 minutes

hamburger buns


1 cup warm water
1 tablespoon yeast
1 tablespoon sugar
1/4 cup butter
1 egg
1 teaspoon salt
2 cup bread flour
1 cup all purpose flour

double in size in oiled bowl, dump out risen dough and cut into 8
roll the 8 into balls and put on pan(parchment paper or silpat on the pan)
cover with cling wrap and let double in size again
375F
15 minutes

fluffy and good
i put sesame seeds ontop, and some spices in the bread. use your own discretion

NO yeast cinnamon buns

Ingredients
Dough

* 2 cups flour
* 2 tablespoons sugar
* 4 teaspoons baking powder
* 1 teaspoon salt
* 3 tablespoons earth balance margarine
* 3/4 cup soy milk

Filling

* 4 tablespoons earth balance margarine
* 1 cup brown sugar
* 3 teaspoons cinnamon

Directions

-For the filling, in a small bowl combine softened margerine, brown sugar and cinnamon to form a crumbly mixture

-Sprinkle 1/2 of the mixture over the bottom of a 9×9 pan.

-In a large bowl mix together flour, sugar, baking powder, and salt.

-Cut in softened margerine (sometimes your hands are the best tools).

-Stir in milk to form a soft dough.

-Roll out dough on a lightly floured into a rectangle about 1/4 inch thick.

-Spread the remaining filling on the rolled out dough.

-Roll up the rectangle, with a sharp knife slice into 18 small rolls (12 if you want them a little bigger).( I made 9.)

-Bake for 20-25 min at 400°F.

Hot no-cross bunnies


For you non religious people, or children, this holiday is about bunnies and candy. so lets give an Easter tradition a non religious take.

INGREDIENTS
2/3 cup soy milk, warmed
8g sachet dry yeast
1 teaspoon caster sugar
2 cups plain flour
½ teaspoon ground cinnamon
1/4 cup earth balance margarine, chopped
1 cup fruit bits
2 tablespoons caster sugar
1 egg

Preheat oven to hot, 400°C
bake for 12-17min.
mix the soy milk, yeast and sugar all together in a bowl, let it get frothy add to everything else.
let raise for 30min, punch it down, ball into rounds, whatever size, I did smaller ones so there were about 25 of them
then roll into logs and flatten

then slice an opening at the end (ears), then fold up the bottom, you can fill it with fruit but i mixed the fruit in instead

filp over and put eyes on, cover with rag or cling wrap and leave for 20min to raise again.

bake bake. glaze with apricot jam when still hot.
